Katherine Jensen Gyllenskog

Katherine Jensen Gyllenskog, 95, of Smithfield, Utah passed away peacefully Tuesday, Dec. 29, 2015.
Katherine was born on 27 Oct. 1920, in Dayton, Idaho, to Alma L. Jensen and Mette Catherine Georgeson. She was raised in Dayton with three brothers and six sisters [all deceased] and told fond stories of thinning beets, singing with her younger sister, Leah, and life in a small farming town. As a child of the Great Depression she learned the value of hard work and thrift, which served her well throughout her life. Katherine attended Utah Agricultural College (USU) and studied business; she enjoyed living in Logan with her sister Phoebe while going to school.
While in college, she met her sweetheart at a church dance in Nibley. She married George Oscar Gyllenskog on 29 Jan. 1944 and was sealed in the Logan LDS Temple one year later. Oscar passed away 16 Feb. 1999. They were happy to spend 55 wonderful years together.
She later worked at the Amalgamated Sugar Company, Cache Valley Dairy, and USU for many years as a secretary, proof reader and typist. Katherine resided in Smithfield [on the same corner] for 70 years, where she and Oscar ran a small farm. They took pride in their wonderful garden and yard; she always loved gardening and canning. Recognized by her family as a beacon of love, compassion and encouragement, Katherine lived a Christ-centered life in word and deed. She will forever be remembered for her kindness and lifetime of service, not only to her family but to those around her. She loved and cared for many who were in need of her help and had the ability to love everyone, especially children. She encouraged her family to live righteously and love generously; and was an example to all. She always enjoyed a feisty Jazz game, genealogy and all kinds of hand work. Katherine was very active in the LDS church, serving in the Relief Society, M.l.A., Primary and with Family History. She served as a Relief Society Visiting teacher for 55 years.
She is survived by her two children, George L. Gyllenskog, Sandy, Utah and Elaine Swensen [Dick] of Smithfield. Katherine is the loving grandmother of four grandchildren, Jennifer Gyllenskog [Alex] of Salt Lake City, Britnee Fenton [Joshua] of Nibley, Erik Swensen [McKenzie] and Ashley Palmer [Eric] of Smithfield. Her posterity also includes three great-grand daughters, Kate, Ivy and Ella Fenton and 2 great-grandsons Stratford Swensen and Lennix Palmer.
Funeral Services will be held at Noon on Saturday, January 2, 2015 in the Smithfield 25th Ward Chapel, 660 West 200 North in Smithfield. A viewing will be held prior to the services from 9:30 a.m. until 11:30 a.m. at the church. Interment will be in the Smithfield City Cemetery.
